Chilli-Braised Pork Shoulder, smoked for 13 hours on the MUDSOG Smoker

Overnight Ugly drum Pork shoulder for MM Day BBQ. Marinaded in Chili pepper paste, then fat side down for about 13hrs. Didn't even bring a thermometer. Used up maybe 1/3 a load of lump and ran at 1/2 vent open on bottom which is my go-to to get in the 220-250 range. These MUDSOG smokers are so cheap and easy to make I even made this one just to keep out at a friends lake house we attend twice a year. Well worth the investment!

ReplyDeleteERIK! - Put another mudsog on the list. Works great! I changed the inputs to have them spaced equally and left off the upper holes since I had some old handles from a prior grill. The inside is per your drawing. 50 - 310 degrees perfectly controllable, burned 20 hours on oak at 220 degrees. Cost = $39. I am debating the extra 5 bucks for paint, after all "ugly" is in the name.
